I love Italian food. I’ve always said that if you cut me, I bleed tomato sauce.
I love Italian food is because I love melted cheese. Specifically, melted mozzarella (or scamorza, if you have some). Whether it’s pizza, lasagna, cannelloni, mannecoti or baked ziti, Italian food usually contains plenty of melted mozzarella.
Low-fat mozzarella, for those of us who want to stay healthy.
I’m certainly not a cheese connoisseur, but those who are, know that the best, most expensive cheeses are those that have been aged for several years.
But aging won’t improve a cheese that was poorly made from the start.
Just like aging doesn’t help improve the Swiss cheese of Windows security.
Even after 17 years, it’s still inedible.
