Quick, Healthy, Delicious Pudding

I’m always on the lookout for healthy, easy-to-make things to eat, and just yesterday, I created a new one.
Here’s a quick, easy way to make your own delicious, sugar-free, fat-free, reduced-calorie, high-protein, low-carb, faux-tapioca pudding.
Here are the ingredients:
- 1 box (enough to make 2 cups) of sugar-free vanilla instant pudding (I use “Great Value” sugar-free French Vanilla instant pudding, because it’s much cheaper than Jell-O instant pudding, but tastes the same.
- 3 cups of skim milk (instead of the two cups that the package calls for)
- 4 packets of Splenda brand sweetener (optional, to add sweetness because we’re using 3 cups of milk instead of 2)
- 1 cup of fat-free cottage cheese (For even more protein, use 2 cups!)
- Cinnamon to sprinkle on top (I use a total of about 1/4 teaspoon)

Pour the milk into a large mixing bowl. Add the Splenda. Slowly add the pudding powder as you mix or whisk the mixture. Continue to mix or whisk it for 2 minutes. The pudding will still be very runny when you’re done mixing it. Refrigerate it for two minutes. Remove it from the refrigerator and add the cottage cheese, stirring it into the thickening pudding until it is evenly dispersed. Re-refrigerate it for 5-30 minutes, depending on how thick you want it to be. Remove the pudding from the refrigerator, spoon it into serving bowls and sprinkle the cinnamon onto each serving right before you serve it.
